The Eclectic Kitchen - Recipes

The benefits of chocolate really are amazing but the fact remains that most of the chocolate you can buy in the stores is so polluted with preservatives and additives that there is virtually no nutritional value left at all.

One of the ways around this is to buy pure chocolate.

While it may be rare and a bit difficult to find, it is worth it if you care anything at all about having your chocolate and eating it too.

When I still lived in the USA I bought it at the Mexican stores since that is where I discovered it quite by accident.

In the Philippines where I live now, as was (and is) the case in Mexico, it is grown here so finding fresh chocolate is relatively easy and cheap.

In the USA, if you are not comfortable enough with Spanish to shop in the Mexican tiendas, you can also look at some of the health food shops.

I have been told it is available there but I have not personally purchased it there.

However, since most of the pure chocolate has already been roasted and ground up, very little comes in anything but powdered chocolate.

If you have managed to find pure chocolate in a more recognizable “candy” form, this will help to make it more palatable and suitable to the sweet-toothed person without removing any of the healthy benefits. Just take care when melting the chocolate as it burns easily.

A cup of this chocolate can be taken after every meal to aid in the digestion of foods, provide important nutrients for the body and … hey … just because it’s chocolate.

Ingredients:

Two ounces of pure chocolate

One quart of milk

One teaspoon of Corn Starch

Three tablespoons of sugar

Two tablespoons of hot water

Preparations:

Mix the cornstarch with one-half pint of your milk.

(Whole milk works much better than skim milk and may just be healthier)

Using a double boiler, put the rest of the milk over high heat and bring it to a boil.

After the milk is boiling, stir in the milk and cornstarch milk … being certain to stir it the entire time.

Mix the chocolate, sugar and hot water and stir it until it has a smooth and even texture.

Add the chocolate to the still hot milk and stir it with a whisk until it is a light and fluffy texture.

Serve hot and enjoy.
