This particular recipe makes an excellent late night snack, light dessert or even just a great appetizer to whet the appetite and aid in the digestive process. Whatever your reason may be for wanting it, it is a great, healthy and tasty treat that will leave you wanting more.

Ingredients:




Whole lettuce leaves (Enough to cover a salad plate for each person)




One cup of cottage cheese (For each serving being made)



Some people use the Ricotta cheese curds rather than the cottage cheese curds but I prefer the cottage cheese personally.



Fresh Fruit (Diced small)



Sweet oranges work well but not with the added cheese toppings. You can also try pineapple, mango, papaya, guava or other fresh fruits. Some people tell me that they use bananas but I prefer to keep my bananas for peanut butter and chocolate mixes.



One-quarter cup grated Cheddar or American cheese (per serving being made)

Preparations:




Cover the plate with two or three whole lettuce leaves, Mix the fresh fruits with the cottage cheese and place it as a mound in the center of the plate. Alternatively, small bowls can be used with the lettuce covering the bowl and the cottage cheese and fruits spread out like a pie filling. Sprinkle the grated cheese on top, cover with plastic or other protective wrap and chill before serving.
